I have enjoyed close to 60 years in the kitchen, with 40 of those years as an ACF member. I remember when they were made in Amana, Iowa and called Radaranges. Conscientious chefs and managers sometimes find themselves frustrated, trying to compensate and take care of an excellent thoughtful cook who winds up being paid the same as some schlep who just shows up for every shift. The pressure at this mid-level in the kitchen hierarchy is enough to drive one to become a schoolteacher or a salesman.
I once suggested to a buddy of mine, an accomplished pastry chef, that he become a consultant. Back then ya had to get two members to sponsor just to apply!
I thought it was a terrific idea, discussing menu features, prices charged, attendance; all of the other chefs just headed for the beer table and the buffet. No interest at all. Next meeting, nominations were solicited for the upcoming election of officers and board, and there were so few nominees they had to make a continuance til the next meeting.
Back then, Phoenix used to argue every year whether they should accept vendor members and the answer was resoundingly NO. A few years later I moved to Vegas, and Associate members were a huge part of the chapter. Almost all the hotel chefs were members and the chapter was primed for growth and prosperity.
Times change, but the more things change, the more they remain the same. The Chef of the Year Award has been established to pay tribute to that member whose culinary expertise and exemplary dedication have enhanced the image of the chef and the association. The Associate of the Year Award pays tribute to the Associate member who has dedicated their time and effort to support the many Associate Advisory Board activities throughout the year.
Nominations are received from the general membership to the Associate Advisory Board through the month of April. The award will be in recognition of the dedication and contribution of time and knowledge to the association and community by the person who has accomplished the most to benefit the association.
The Associate Advisory Board then sends out the candidates to the Associate membership by way of secret ballot. The Associate Advisory Board counts the returned ballots and announces the chosen Associate of the Year at the Chef of the Year awards dinner. For the Chef of the Year, along with great honor comes great responsibility.
At the January general membership meeting, the President will announce that Chef of the Year is open for candidacy. The requirements, qualifications, duties, and responsibilities of the Chef of the Year will be available at that meeting as well as posted on the chapter website.
Member submits his candidacy in writing to the Chairman of the Board or current Chef of the Year. Each candidate will give a five-minute presentation as to why they should be honored with the Student Culinarian of the Year title at the May Board of Directors meeting.
The Board of Directors then votes on the candidates, and the chosen candidate is announced at the Chef of the Year awards dinner. Both became lifelong mentors for me and helped me develop my own style and flair while guiding me down the path to becoming a Chef.
